How Much Turkey Per Person (and How Long to Thaw It)

Quick answer: Buy 1 lb of whole turkey per person, 1.25 lb if you want a few leftovers, and 1.5 lb for plenty. Count kids as half, then thaw in the fridge at about 24 hours per 4 to 5 lb so the bird is ready on time.

This is the same rule of thumb behind most trusted sources. USDA’s turkey guide says to allow 1 pound of turkey per person for fresh or frozen birds, the National Turkey Federation suggests at least 1 pound, and big cooking sites land between 1 and 1.5 pounds. The extra half pound is for leftovers, not for hungry guests.

Turkeys are sold in whole-pound sizes, so buy the closest size at or above your number. Once you pass about 20 to 24 pounds, two smaller turkeys are usually easier to thaw, fit in the oven, and cook evenly than one giant bird.

So a 14 lb turkey comfortably feeds 10 people with leftovers to spare. A 12 lb turkey feeds about 8 to 9 people if you want a leftover sandwich or two. Online charts vary a little, but they cluster in this same range.

Why does the number change?

A whole turkey is a lot of bone, skin, fat, and drippings. Roughly half of the raw weight ends up as meat you can eat, which is why the rule is 1 pound per person even though the cooked turkey on a plate weighs much less. Four things move your number:

  • Number of side dishes. With stuffing, mashed potatoes, two vegetables, and pie, most people eat less turkey. With a short menu, they eat more.
  • Hungry crowd. Teenagers, athletes, and a football-watching group eat more than a quiet dinner party.
  • Kids. Count children under about 12 as half a portion.
  • Leftovers. This is the big one. Turkey sandwiches, soup, and tacos are the best part of the weekend for many families, and leftover planning is where most people under-buy.

Bone-in breast, boneless breast, and turkey parts

If you are feeding a small group, a whole bird may be more turkey than you need. Use these rules of thumb instead:

  • Boneless turkey breast: about 1/2 pound (8 ounces) of raw meat per person.
  • Bone-in turkey breast: about 3/4 pound per person, because the bones and skin add weight.
  • Turkey drumsticks and thighs: about 1 pound per person, since they are mostly bone.
  • Turkey wings: about 1 pound per person, since they have the least meat.

How much does a turkey cost per person?

You do not need a current price to work this out. The formula is:

cost per person = price per pound × pounds per person

For example (illustrative numbers only, not a current price): a turkey at $1.50 per pound with 1.25 lb per person is about $1.88 per person in raw turkey. Compare that to a boneless breast at $5.00 per pound and 0.5 lb per person, which is $2.50 per person with almost no waste. The cheaper price per pound is not always the cheaper dinner, so check the price per usable serving.

How long does it take to thaw a turkey?

A frozen turkey keeps safely in the freezer, but it needs time to thaw. USDA lists three safe ways to thaw: in the refrigerator, in cold water, or in the microwave. Never thaw a turkey on the counter: after 2 hours the outer layer sits in the “Danger Zone” (40°F to 140°F), where bacteria multiply rapidly, even if the center is still frozen.

Refrigerator thawing (best method)

Allow about 24 hours for every 4 to 5 pounds at 40°F or below. Keep the turkey in its original wrapper on a tray or in a pan to catch any juices.

A turkey thawed in the fridge can wait 1 to 2 more days before you cook it, which gives you a safety cushion. It can also be refrozen without cooking, although some quality may be lost.

Cold-water thawing (faster, more work)

Allow about 30 minutes per pound. Put the turkey in a leak-proof bag, submerge it in cold tap water, and change the water every 30 minutes so it stays cold. Cook the turkey immediately after it thaws.

Microwave thawing (small birds only)

Follow your microwave manufacturer’s instructions for turkey, and cook it immediately after thawing. Check your owner’s manual for the largest turkey that fits and the minutes per pound. This works best for a small turkey or a breast.

Thaw calendar for Thanksgiving

Thanksgiving 2026 is Thursday, November 26. Count backward from dinner. A 16 lb turkey needs 3 to 4 days in the fridge, so move it from the freezer to the refrigerator by Sunday, November 22 at the latest. A 22 lb turkey needs 5 to 6 days, so start by Friday, November 20 to be safe. If you run late, switch to cold water and plan around the hours in the table above.

Fresh turkeys do not need thawing, but USDA says to buy them only 1 to 2 days before cooking. A frozen turkey stays safe indefinitely in the freezer, though USDA suggests cooking it within 1 year for best quality.

Cooking it safely

  • Cook to 165°F. Use a food thermometer in the innermost part of the thigh, the wing, and the thickest part of the breast. The color of the meat or juices is not a reliable sign.
  • Stuffing is riskier inside the bird. USDA recommends cooking stuffing separately. If you stuff the turkey, stuff it loosely (about 3/4 cup per pound), put it straight into an oven set to no lower than 325°F, and make sure the center of the stuffing also reaches 165°F.
  • Rest it. Let the cooked turkey stand about 20 minutes before carving. That helps the juices settle.
  • Remove the giblets after thawing and cook them separately.

These times are approximate. The thermometer decides when the turkey is done.

Cooking from frozen? USDA says it is safe, but the cooking time will be at least 50 percent longer than for a fully thawed turkey. That is a real backup plan if you run out of thawing time, as long as the bird is not stuffed.

Leftovers: how long they last

Cut the turkey off the bone and refrigerate within 2 hours of cooking (1 hour if it is above 90°F outside). Slice the breast and store it in shallow containers so it cools quickly. USDA says leftovers keep 3 to 4 days in the refrigerator or 3 to 4 months in the freezer for best quality, and should be reheated to 165°F.   1. Count adults, and count each child as half.
  2. Pick your leftover level: 1 lb, 1.25 lb, or 1.5 lb per guest.
  3. Multiply, then round up to the nearest available turkey size (or split into two birds above about 24 lb).
  4. Work backward from dinner to pick the day you start thawing.
  5. Buy a thermometer if you do not own one, and plan to hit 165°F.
